Ham and Cheese Croquettes
Ingredients
- Cooked ham or deli shoulder
- Cheese of your choice — the stronger it is, the more intense the flavor
- Wheat flour
- Olive oil
- Butter
- Milk
- Nutmeg
- Salt
- Black pepper
- Breadcrumbs
- Eggs
Preparation
- Cut the ham and cheese into small cubes
- You can lightly toast the ham in a pan with a bit of butter to enhance its flavor.
- In a pan with oil, melt and brown the butter.
- Pour in the cold milk and bring everything to a boil.
- Season with pepper, nutmeg, and salt. Then add the ham.
- Cook for 20 minutes.
- Before removing from the heat, add the cheese — not earlier — so it doesn’t fully melt into the béchamel.
- Let the mixture cool for 3 hours.
- Shape the croquettes and coat them in beaten egg and breadcrumbs.
- Let them rest for half an hour.
- Fry them in a pan.
- Serve very hot.
