Black Pudding and Apple Croquettes
Ingredients
- Black pudding
- Apples
- Flour
- Salt
- Butter
- Milk
- Eggs
- Breadcrumbs
- Olive oil
- Pepper
- Nutmeg
Preparation
- Peel and dice the apples.
- Remove the casing from the black pudding and crumble it.
- Sauté the black pudding and apples in very hot oil (add a pinch of sugar for a caramelised touch).
- Add the butter and flour, stirring well.
- Warm the milk separately and add it gradually to the mixture.
- Season with salt, pepper, and nutmeg. Let it cool in the fridge.
- Shape the croquettes and coat them in beaten egg and breadcrumbs.
- Fry until golden brown.
- Time to enjoy them!
