Chard Croquettes

Ingredients

  • Swiss chard
  • Butter
  • Flour
  • Onion
  • Milk
  • Salt
  • Eggs
  • Breadcrumbs

Preparation

  1. Wash the Swiss chard, remove the strings, and cut it into pieces
  2. Boil it in salted water for 10 minutes
  3. Sauté the onion in butter. When golden, add the chopped chard
  4. Add the flour and then pour in the milk gradually, stirring until the mixture comes away from the sides of the pan
  5. Let the mixture cool in the fridge for a couple of hours
  6. Shape the croquettes and coat them in beaten egg and breadcrumbs
  7. Fry them and place on absorbent paper to remove excess oil
  8. Serve warm or at room temperature

Chard is a very healthy and nutritious leafy vegetable. It belongs to the same family as beetroot, although unlike beets, its roots are not edible. Chard is also closely related to spinach.

There are many varieties of chard to suit every taste and preference: wild, red, black, country, coastal, common, and more.

It can be eaten raw in salads or cooked beforehand (usually boiled).

It’s rich in vitamins C and K, fiber, iron, and potassium. It has antioxidant properties, supports healthy digestion, strengthens the immune system, and helps proper blood clotting.

Traditionally, chard hasn’t been a favorite among children. But what if you disguise it in a delicious and playful chard croquette?
