Garlic Prawn Croquettes

Ingredients

  • Prawns
  • Garlic
  • Olive oil
  • Milk
  • Fish stock
  • Flour
  • Salt
  • Pepper
  • Parsley
  • Chilli or cayenne pepper

Preparation

  1. Boil the prawn heads and shells with water and salt. Strain the broth and set aside.
  2. Sauté the prawns in olive oil with garlic and chilli or cayenne pepper.
  3. Add parsley and flour, stirring with enthusiasm.
  4. Pour in the milk and the reserved broth. Let it cool.
  5. Shape the croquettes and coat them in beaten egg and breadcrumbs.
  6. Fry them and serve immediately.
