Korokke Croquettes

Ingredients

  • Potatoes
  • Mixed minced meat
  • Onion
  • Carrot
  • Pepper
  • Salt
  • Eggs
  • Flour
  • Japanese panko breadcrumbs

Preparation

  1. Boil the potatoes for 20 minutes and mash them.
  2. Sauté the finely chopped onion and carrots.
  3. Add the minced meat and season with salt and pepper.
  4. Mix the mashed potatoes with the sautéed ingredients.
  5. Shape the croquettes into rounded forms.
  6. Coat them in flour, beaten eggs, and panko breadcrumbs.
  7. Fry the croquettes until perfectly golden.
  8. Place them on absorbent paper to remove excess oil.
  9. Serve with Japanese sauces such as yakitori or tonkatsu.

Korokke: Japanese-Style Croquettes

Simply put, korokke is the Japanese version of the croquette.

A fried dish made with vegetables, seafood, or minced and boiled meat, usually served with white sauce or mashed potatoes.

It can take the flat, burger-like shape or be rolled and coated in a mixture of breadcrumbs, egg, and wheat flour before frying to a golden finish.

Korokke, inspired by the French croquette, dates back to the late 19th century.
