Korokke Croquettes
Ingredients
- Potatoes
- Mixed minced meat
- Onion
- Carrot
- Pepper
- Salt
- Eggs
- Flour
- Japanese panko breadcrumbs
Preparation
- Boil the potatoes for 20 minutes and mash them.
- Sauté the finely chopped onion and carrots.
- Add the minced meat and season with salt and pepper.
- Mix the mashed potatoes with the sautéed ingredients.
- Shape the croquettes into rounded forms.
- Coat them in flour, beaten eggs, and panko breadcrumbs.
- Fry the croquettes until perfectly golden.
- Place them on absorbent paper to remove excess oil.
- Serve with Japanese sauces such as yakitori or tonkatsu.
Korokke: Japanese-Style Croquettes
Simply put, korokke is the Japanese version of the croquette.
A fried dish made with vegetables, seafood, or minced and boiled meat, usually served with white sauce or mashed potatoes.
It can take the flat, burger-like shape or be rolled and coated in a mixture of breadcrumbs, egg, and wheat flour before frying to a golden finish.
Korokke, inspired by the French croquette, dates back to the late 19th century.
