Monkfish and Prawn Croquettes
Ingredients
- Monkfish
- Prawns
- Bay leaf
- Onion
- Butter
- Olive oil
- Flour
- Milk or fish stock
- Salt
- Pepper
- Eggs
- Breadcrumbs
Preparation
- Boil the monkfish trimmings and prawn shells (skip this step if using milk instead of stock). Set aside.
- Shred the prawns and monkfish, then sauté them with onion, butter, and flour. Add the milk or fish stock, stir, and let the mixture rest for 8 hours.
- Shape the croquettes, then coat them in beaten eggs and breadcrumbs.
- Fry until golden brown.

Monkfish

Prawn
