Potato Croquettes

Ingredients

  • Floury potatoes
  • Eggs
  • Grated Parmesan cheese
  • Cooked ham
  • Bread crumbs
  • Olive oil
  • Black pepper
  • Nutmeg
  • Oregano
  • Salt

Preparation

  1. Boil the potatoes with the skin on.
  2. Peel them once warm and mash them with a fork.
  3. Add the egg yolk.
  4. Season with salt and pepper and add the nutmeg.
  5. Mix in the grated Parmesan.
  6. Combine everything and add the cooked ham.
  7. Shape the croquettes and brush them lightly with olive oil.
  8. Coat them in beaten egg and then bread crumbs.
  9. Fry them and drain to remove excess oil.
  10. Finish with a touch of oregano.

Potatoes: they go with everything and everyone loves them

They were already being cultivated 10,000 years ago on the high plains of what is now Bolivia, in southern Peru and in parts of modern-day Ecuador.

During the Inca Empire they became widely established and developed.

The Spanish brought them to Europe, spreading mainly along two routes: Portugal, France and Italy on one side, and the Netherlands, Ireland and England on the other.

Potatoes helped to dramatically reduce recurrent famines in Europe.

Galician potatoes and Canary Island papas enjoy great popular reputation and culinary prestige.

Worldwide, around 350 million tonnes of potatoes are produced each year, with about 20 million hectares dedicated to their cultivation.

The main producing countries are China, Russia, India, Poland and the USA.

Potatoes are rich in vitamin C, fibre, carbohydrates, iron, magnesium, phosphorus, zinc and potassium.

They are filling, full of energy and good for the heart. Anti-stress properties. They reduce uric acid levels in the blood and aid digestion.
