Pumpkin and Mushroom Croquettes with Cheese

Ingredients

  • Boiled pumpkin
  • Olive oil
  • Onion
  • Garlic
  • Mushrooms
  • Soft cheese portions
  • Salt
  • Pepper
  • Eggs
  • Flour

Preparation

  1. Sauté the chopped onion and garlic in a pan.
  2. Add the cleaned and finely chopped mushrooms. Sauté briefly.
  3. Stir in the boiled pumpkin and mix well.
  4. Add the soft cheese portions and blend them into the mixture.
  5. Let it rest in the refrigerator.
  6. Shape the croquettes into round balls, then coat them in beaten egg and breadcrumbs.
  7. Fry them until golden.
  8. Drain the excess oil on absorbent kitchen paper.
  9. They can be enjoyed cold, warm, or hot.
