Ingredients

  • Onion
  • Garlic
  • Zucchini
  • Red peppers
  • Eggplant
  • Homemade tomato sauce
  • Salt
  • Pepper
  • Olive oil
  • Butter
  • Milk
  • Flour
  • Eggs
  • Breadcrumbs

Preparation

  1. Wash the vegetables and cut them into small pieces.
  2. Cook them in a pan over medium heat.
  3. Add the tomato sauce and the eggplant. Set aside.
  4. Melt the butter with the flour and milk, then add the sautéed vegetables.
  5. Shape the croquettes, coat them in beaten egg and breadcrumbs, and fry.
  6. Let them drain on absorbent kitchen paper.
  7. A country-style specialty.

Typical of the Castilian region of La Mancha. Known simply as “pisto manchego” or just “pisto,” it’s all the same.

This traditional country dish is essentially a vegetable stew. Farmers used to toss into the clay pot whatever their garden had to offer.

Pisto is made with tomato, green peppers (sometimes red too), onion, garlic, and olive oil. Zucchini and/or eggplant are optional.

It can be served hot or cold. Some like to pair it with a fried egg, sausage, or cured ham.
